Position

 

Executive Baker, Nunavut

 

Location and Reporting Structure

Reporting to the Manager, Camp, this position will be a fly in- fly out 3x3 rotation based in Nunavut, Canada.

 

Responsibilities

 

  • Oversee the preparation of baked goods in accordance with established procedures, ensuring efficient use of resources while maintaining high standards of quality and consistency;
  • Demonstrate creativity and skill in preparing and presenting baked products, using various display techniques to enhance visual appeal and guest satisfaction;
  • Collaborate with chefs to create specialized items for events, ensuring that dietary needs, including allergies and preferences, are accommodated;
  • Procure baking ingredients and supplies from approved vendors, ensuring that all orders are in line with company procedures, and reconcile invoices with deliveries to maintain product quality and supplier performance;
  • Implement efficient turnover practices to ensure that food is used within its shelf life, reducing waste and maintaining cost efficiency;
  • Assist in conducting monthly inventory counts and valuations to ensure accurate stock levels and monitor food costs;
  • Maintain strict adherence to Public Health regulations regarding sanitation and food safety, ensuring that the kitchen is clean at all times;
  • Provide directions and training to bakery staff and culinary personnel, ensuring they meet the high standards of production, hygiene, and safety;
  • Use coaching techniques to motivate staff, addressing performance issues as necessary, and working with the Executive Chef, Camp Manager, and Human Resources on performance management or corrective actions;
  • Collaborate with the Executive Chef to manage food and labor costs, ensuring that production stays within budget targets and implementing controls to optimize expenses; and
  • Assist with the planning and execution of special events, using themed baked goods to enhance guest participation and create memorable dining experiences.

 

Desired Competencies and Requirements

 

  • Five (5) years of experience as a baker, preferably in a remote or camp environment is required;
  • Degree from post-secondary culinary arts program or a related field;
  • Red Seal Journeyman Baker Certification; and
  • Food safety certification and Strong knowledge of food safety regulations.
