Position

 

Sous Chef, Nunavut

 

Location and Reporting Structure

Reporting to the Executive Chef, this position will be a fly in- fly out 3x3 rotation based in Nunavut, Canada.

 

Responsibilities

 

  • Supervise kitchen staff in preparing soups, sauces, and special event dishes, ensuring consistency in cooking methods, garnishing, and portion sizes according to standard recipes;
  • Support the Executive Chef in managing monthly inventories, pricing, cost controls, requisitions, and issuing of food supplies for efficient production;
  • Conduct daily counts of raw ingredients to ensure all items are accounted for, contributing to effective cost management;
  • Take full responsibility for kitchen operations, staff, and food production when the Executive Chef is unavailable;
  • Assist in training, supervising, and evaluating kitchen staff, while ensuring adherence to sanitation, safety protocols, and maintaining high food quality and presentation standards;
  • Ensure proper staffing levels for optimal productivity and quality, while controlling food and payroll costs;
  • Make recommendations for the maintenance and repair of kitchen equipment and facilities to ensure smooth operation;
  • Check mise en place before service, inspect food presentation, address guest complaints, and assist in resolving them promptly;
  • Support the procurement, storage, and issuing of food supplies, while ensuring the security of kitchen equipment and inventory; and
  •  Prepare reports, manage staff schedules, help with menu costing, and carry out other administrative duties as assigned by the Executive Chef.

 

Desired Competencies and Requirements

 

  • Four (4) years of food preparation, encompassing all phases of food preparation and kitchen operation is required;
  • Degree from post-secondary culinary arts program or a related field;
  • Red Seal Journeyman Cook Certification; and
  • Food safety certification and Strong knowledge of food safety regulations.
